Today I made some mango chicken curry. I cheated and used a mango curry paste. The recipe called for 2 cups of milk and 2 cups of cream. I'm staying away from dairy so I used coconut milk. It was only just OK.
I was thinking of pouring off some of the coconut milk (it was a bit thin) and adding some Alphonse Mango Puree to it. What do you think? Any other ideas to balance the flavours.

What recipe did you use, wonka? The secret to a great curry seems to be the mingling of flavors. I would add some spices.

I was being lazy and I just followed the recipe on the mango curry paste jar. I think I'll toast up some of my typical curry spices and add some mango puree to make this more to my liking.
